Ingredients
  

  • 4 Baked Potatoes
  • 2 tablespoons Butter
  • ½ Onion finely diced
  • 2 tablespoons All-Purpose Flour
  • 1 cup Milk
  • 6-8 ounces Steamed Broccoli chopped into bite-sized pieces
  • 1-2 cups Colby Jack Cheese
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • ¼ – ½ cup Warm Water or Chicken Stock
  • 1 teaspoon Slap Ya Mama Seasoning Optional

Method
 

  1. Preheat the oven to 425 degrees. Wash and dry the baked potatoes, wrap them tightly in foil, and bake for 1 hour or until soft.
  2. In a medium saucepan over medium heat, melt the butter and sauté the onions until they become soft.
  3. Mix in the flour until it forms a soft paste and cook for 1-2 minutes.
  4. Gradually whisk in the milk, adding it ½ cup at a time to avoid breaking the roux.
  5. Add in the steamed broccoli, 1 cup of cheese, and the seasoning. If the sauce is too thick, incorporate ¼ cup of warm water or chicken stock until reaching the desired thickness.
  6. Taste and adjust the seasoning, considering the option to add Slap Ya Mama for a hint of spice.
  7. Once the potatoes are done, split them open and generously pour the cheese sauce into the middle. Finish by topping them with extra cheese. Enjoy!
