Baked Potatoes with Broccoli Cheese Sauce
Soft warm baked potato covered in cheesy broccoli sauce!
Ingredients
- 4 Baked Potatoes
- 2 tablespoons Butter
- ½ Onion finely diced
- 2 tablespoons All-Purpose Flour
- 1 cup Milk
- 6-8 ounces Steamed Broccoli chopped into bite-sized pieces
- 1-2 cups Colby Jack Cheese
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Garlic Powder
- ¼ – ½ cup Warm Water or Chicken Stock
- 1 teaspoon Slap Ya Mama Seasoning Optional
Instructions
- Preheat the oven to 425 degrees. Wash and dry the baked potatoes, wrap them tightly in foil, and bake for 1 hour or until soft.
- In a medium saucepan over medium heat, melt the butter and sauté the onions until they become soft.
- Mix in the flour until it forms a soft paste and cook for 1-2 minutes.
- Gradually whisk in the milk, adding it ½ cup at a time to avoid breaking the roux.
- Add in the steamed broccoli, 1 cup of cheese, and the seasoning. If the sauce is too thick, incorporate ¼ cup of warm water or chicken stock until reaching the desired thickness.
- Taste and adjust the seasoning, considering the option to add Slap Ya Mama for a hint of spice.
- Once the potatoes are done, split them open and generously pour the cheese sauce into the middle. Finish by topping them with extra cheese. Enjoy!
