The apple cobbler recipe begins with preparing a flavorful apple filling featuring thinly sliced apples cooked with lemon zest, sugars, spices, and vanilla extract. Ingredients

Apple Filling Ingredients:

  • 4 pounds of apples peeled, cored, and thinly sliced, approximately 7 apples; variety optional
  • Zest from 1 small lemon
  • Juice from 1 small lemon
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1/4 cup all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon kosher salt
  • 2 teaspoons vanilla extract

Cobbler Topping Ingredients:

  • 2 1/2 cups all-purpose flour spooned and leveled
  • 1 1/2 cups granulated sugar
  • 1 teaspoon kosher salt
  • 2 teaspoons baking powder
  • 1/2 cup buttermilk
  • 1 egg
  • 1/2 cup cold butter sliced into 9 pieces
  • 1-2 teaspoons sugar for sprinkling
  • Vanilla ice cream for serving
  • Caramel sauce for drizzling

Instructions

  • Preheat the oven to 375 degrees.

For the apple filling:

  • Combine all the apple filling ingredients (except vanilla extract) in a large pot.
  • Cook over low heat for 10-15 minutes until apples are tender. Gently toss the apples occasionally to prevent breaking.
  • Once apples are soft and sauce is thickened, remove from heat and fold in vanilla extract.
  • Transfer the apple mixture to a deep 9×13-inch dish.

For the cobbler topping:

  • In a large bowl, mix together all dry ingredients.
  • Add buttermilk and egg, mixing until a thick biscuit-like batter forms.
  • Spread the cobbler topping evenly over the apples in the dish. You can drop scoops of batter over the apples and spread it out.
  • Arrange cold butter slices on top of the batter.
  • Place the dish on the middle rack of the preheated oven. Put a large pan on the bottom rack to catch any drips.
  • Bake for 45-50 minutes or until the top is golden brown.
  • Once done, sprinkle with sugar and let it rest for 20 minutes before serving.
  • Serve warm with vanilla ice cream and drizzle with caramel sauce. Enjoy!
