Instructions
Preheat the oven to 425 degrees. Wash and dry the baked potatoes, wrap them tightly in foil, and bake for 1 hour or until soft.
In a medium saucepan over medium heat, melt the butter and sauté the onions until they become soft.
Mix in the flour until it forms a soft paste and cook for 1-2 minutes.
Gradually whisk in the milk, adding it ½ cup at a time to avoid breaking the roux.
Add in the steamed broccoli, 1 cup of cheese, and the seasoning. If the sauce is too thick, incorporate ¼ cup of warm water or chicken stock until reaching the desired thickness.
Taste and adjust the seasoning, considering the option to add Slap Ya Mama for a hint of spice.
Once the potatoes are done, split them open and generously pour the cheese sauce into the middle. Finish by topping them with extra cheese. Enjoy!
