Ingredients

Streusel Topping:

  • 6 tablespoons unsalted butter melted
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • Pinch of salt

Cake Batter:

  • 3 ripe bananas
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup full-fat sour cream
  • 1/4 cup vegetable or canola oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 – 1 cup pecans or walnuts
  • 1 extra banana sliced (optional)

Glaze:

  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a small bowl, combine all streusel topping ingredients using a fork until crumbly.
  • In the bowl of a mixer, blend together ripe bananas, sugar, cinnamon, salt, sour cream, and oil for one minute.
  • With the mixer on low, add eggs and vanilla, mixing for about 20 seconds until incorporated. Gradually add flour and baking soda, mixing on medium speed for one minute. Fold in nuts.
  • Line a 9×5 inch loaf pan with parchment paper and coat with non-stick cooking spray. Pour half of the cake batter into the pan, followed by half of the streusel topping. Add the remaining batter and top with sliced banana, if using, and remaining streusel topping.
  • Place the loaf pan on a baking sheet to catch any drips and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, transfer the cake to a wire rack and let it cool for 30 minutes before removing from the pan to cool completely.
  • In a small bowl, whisk together powdered sugar, milk, and vanilla extract to make the glaze. Drizzle over the cooled cake before serving. Enjoy!
