Banana Nut Overnight French Toast Bake with Hawiian Rolls

Don't let those Hawaiian rolls go to waste! This is a mix between banana nut bread and banana fosters!

Ingredients
  

Brown Sugar Mixture

  • 1 Stick Butter, Unsalted
  • 1 Cup Dark Brown Sugar Can use light as well

Egg Mixture

  • 6 Eggs
  • 1/2 Cup Milk, Whole
  • 1/2 Cup Heavy Cream
  • 1 Tbsp Vanilla Extract
  • 1/2 tsp Salt

French Toast Mixture

  • 1/2 Cup Pecans Roughly Chopped
  • 4 Bananas Sliced
  • 12 Hawiian Rolls

Instructions
 

Brown Sugar Mixture

  • In a pot over medium heat melt your butter. Add brown sugar once melted and bring to a simmer. Stir occasionally so that the bottom does not burn.

Egg Mixture

  • To a large bowl, add your eggs. Scramble them together. Add the rest of your ingredients. Whisk to combine.

Assemble

  • Spray a 9×13 with non-stick cooking spray. Place your sliced bananas in a single layer to the bottom. Top with your pecans. Pour over your brown sugar butter mixture. Cut little X in the top of your Hawaiian rolls to help them soak up all the liquid.
  • Place the Hawaiian rolls X side up on top of the butter mixture in your 9×13. Pour your egg mixture over the top.
  • Cover with plastic wrap and place in the fridge overnight.
  • Pre-heat your oven to 350 degrees. Pull your bake out while the oven preheats. Cover with foil and bake for a total of 40 minutes. Removing the foil for the last 10 minutes.
  • Let the bake rest on the counter for 10 minutes. Run a butter knife along the edge. Flip it over onto a large plate or cutting board.
  • Enjoy!
  • You can top this with a glaze using equal parts powder sugar and milk!
