Ingredients

  • 16 oz of Shrimp peeled and deveined
  • 12 oz of bow tie pasta cooked till al dente
  • 1 tablespoon of Avocado Oil
  • 1 teaspoon of lemon pepper seasoning
  • 3 tablespoon of Blackened Seasoning
  • 1 Green Bell Pepper Diced
  • 1 Red Bell Pepper Died
  • 1 Onion Diced
  • 8 oz of Mushrooms Diced
  • 4-5 Garlic Cloves
  • ½ Cup of Butter
  • 4 Cups of Heavy Cream
  • 1 Cup of Freshly Grated Parmesan
  • 8 oz of Mozzarella Cheese
  • Salt, Pepper, and Garlic Powder to taste

Instructions

  • Boil the pasta in salted water according to package directions. Reserve 1 cup of pasta water before draining.
  • Toss shrimp with avocado oil, lemon pepper seasoning, and blackened seasoning.
  • Heat avocado oil in a large pan and cook shrimp for 5-10 minutes until done. Remove shrimp and juices from the pan, set aside.
  • Add more avocado oil to the pan and sauté bell peppers, onions, and mushrooms for about 5 minutes. Season with salt, pepper, and garlic powder. Add minced garlic during the last minute.
  • Remove vegetables from the pan and set aside.
  • Melt butter in the same pan. Add heavy cream and simmer for 3-4 minutes, stirring constantly to avoid burning.
  • Stir in grated Parmesan cheese on low heat until melted.
  • Add cooked pasta, shrimp (with juices), and sautéed vegetables to the pan. Toss to combine.
  • Add mozzarella cheese and toss until melted and well-combined.
  • If the sauce is too thin, gradually add reserved pasta water to thicken.
  • Serve with garlic bread and enjoy.
