Chicken Bacon Ranch Quesadillas
You will never go back to restaurant quesadilla after you make these simple and delicious Chicken Bacon Ranch Quesadillas.
Ingredients
- 8 count Chicken Thighs Boneless & Skinless
- 1 Tbsp Olive Oil
- 2 Tbsp Ranch Seasoning
- 1 tsp Black Pepper
- 1 tsp Paprika
- 1 tsp Chili Powder
- 4 Bacon Strips Cooked
- 1/2 Onion Diced (Optional)
- 2 Cups Cobley Jack Cheese Fresh Shredded
- 4 Large Flour Tortillas
Instructions
- Trim the fat from 8 boneless and skinless chicken thighs. Add them to a large bowl and season with olive oil, ranch seasoning, black pepper, paprika, and chili powder. Let mixture marinate for 30 minutes.
- Preheat air fryer to 400. Add Chicken in a single layer to the air fryer. (I can only fit 4 thighs at a time) Cook for a total of 8-10 minutes. Flipping halfway. Check with a meat thermometer for an internal temp of 165 degrees.
- Cook your bacon during this time and shred your cheese.
- Once your chicken is done cooking let it rest for 5 minutes. Chop into bit size pieces.
- To a large pan over medium heat. Add 1 tortilla, 1/4 cup of cheese, then chicken, then bacon, and another 1/4 cup of cheese. Fold over your tortilla to make a taco. Cook for 2-3 minutes per side or until crispy.
- Serve with homemade ranch or Bailee's Kitchen Guacamole! Enjoy!
