1TbspOlive Oil
2TbspRanch Seasoning
1tspBlack Pepper
1tspPaprika
1tspChili Powder
4Bacon StripsCooked
1/2OnionDiced (Optional)
2CupsCobley Jack Cheese Fresh Shredded
4LargeFlour Tortillas
Instructions
Trim the fat from 8 boneless and skinless chicken thighs. Add them to a large bowl and season with olive oil, ranch seasoning, black pepper, paprika, and chili powder. Let mixture marinate for 30 minutes.
Preheat air fryer to 400. Add Chicken in a single layer to the air fryer. (I can only fit 4 thighs at a time) Cook for a total of 8-10 minutes. Flipping halfway. Check with a meat thermometer for an internal temp of 165 degrees.
Cook your bacon during this time and shred your cheese.
Once your chicken is done cooking let it rest for 5 minutes. Chop into bit size pieces.
To a large pan over medium heat. Add 1 tortilla, 1/4 cup of cheese, then chicken, then bacon, and another 1/4 cup of cheese. Fold over your tortilla to make a taco. Cook for 2-3 minutes per side or until crispy.
Serve with homemade ranch or Bailee's Kitchen Guacamole! Enjoy!
