Crockpot Cajun Chicken Spaghetti
Ingredients
- 3 chicken breasts
- 15 oz can of fire roasted tomatoes
- 10.5 oz can of cream of mushroom soup
- 1 cup water or chicken broth
- 2 garlic cloves minced
- 1 onion diced
- 1 bell pepper diced
- 8 oz mushrooms sliced
- 1 poblano or jalapeno diced
- 34 tablespoons Cajun seasoning
- 8 oz cream cheese
- 1 lb cooked spaghetti
- 2 cups cheddar cheese mild or sharp
Instructions
- In your crockpot, stir together the tomatoes, cream of mushroom soup, water or chicken broth, garlic, onion, bell pepper, mushrooms, poblano or jalapeno, and 2 tablespoons of Cajun seasoning.
- Top with the chicken breasts and sprinkle with additional Cajun seasoning.
- Cook on low for 68 hours or on high for 4 hours.
- Start cooking the spaghetti during the last 20 minutes of crockpot cooking time.
- Remove the chicken from the crockpot and place it on a cutting board. Turn the crockpot to low and add the cream cheese.
- Chop the chicken into bitesize pieces and add back to the crockpot along with the cooked spaghetti and cheddar cheese.
- Turn the crockpot to warm. Fold everything together until well mixed.
