Ingredients
  

  • 3 chicken breasts
  • 15 oz can of fire roasted tomatoes
  • 10.5 oz can of cream of mushroom soup
  • 1 cup water or chicken broth
  • 2 garlic cloves minced
  • 1 onion diced
  • 1 bell pepper diced
  • 8 oz mushrooms sliced
  • 1 poblano or jalapeno diced
  • 34 tablespoons Cajun seasoning
  • 8 oz cream cheese
  • 1 lb cooked spaghetti
  • 2 cups cheddar cheese mild or sharp

Instructions
 

  • In your crockpot, stir together the tomatoes, cream of mushroom soup, water or chicken broth, garlic, onion, bell pepper, mushrooms, poblano or jalapeno, and 2 tablespoons of Cajun seasoning.
  • Top with the chicken breasts and sprinkle with additional Cajun seasoning.
  • Cook on low for 68 hours or on high for 4 hours.
  • Start cooking the spaghetti during the last 20 minutes of crockpot cooking time.
  • Remove the chicken from the crockpot and place it on a cutting board. Turn the crockpot to low and add the cream cheese.
  • Chop the chicken into bitesize pieces and add back to the crockpot along with the cooked spaghetti and cheddar cheese.
  • Turn the crockpot to warm. Fold everything together until well mixed.
  • Serve and enjoy!
