Trim any tough fat from the Tri-Tip and pat it dry. Lightly coat it with olive oil and generously season all sides with your preferred steak seasoning or a mix of salt, coarse pepper, and garlic powder.
In a large pan over medium-high heat, sear the Tri-Tip for 3-4 minutes per side or until it achieves a nice brown color.
Place sliced onions and garlic in the bottom of the crockpot. Put the seared Tri-Tip on top of the vegetables.
Pour beef broth into the hot pan used for searing, scraping up all the browned bits from the bottom. Transfer the broth to the crockpot.
Cook on low for 6-8 hours or on high for 3-4 hours. The Tri-Tip is done when it easily shreds with two forks.
Shred the Tri-Tip to your desired size. Move the meat to one side of the crockpot.
In a small bowl, whisk together ¼ cup of the broth with cornstarch. Add this mixture to the crockpot broth. Allow it to set for 10 minutes on low to thicken.
