Peach & Bacon Cornbread Muffins

Ingredients

  • 1 lb Peaches Frozen, Drained, and Roughly Chopped
  • ½ Cup Brown Sugar
  • 1 Tbsp Bacon Fat

Muffins:

  • 1 Cup Cornmeal
  • 1 Cup All-Purpose Flour
  • ¼ Cup Sugar
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • ¼ tsp Salt
  • ½ tsp Cinnamon
  • 2 Eggs
  • ¾ Cup Milk
  • ½ Cup Melted Butter
  • 4 Bacon Strips Cooked and Chopped

Instructions

  • Preheat your oven to 400 degrees and generously spray a muffin tin with non-stick cooking spray.
  • In a medium bowl, mix together the chopped peaches, brown sugar, and bacon fat. Add 2 tablespoons of the peach mixture to the bottom of each muffin cup. Place the muffin tin in the oven and let it bake for 10 minutes.
  • Meanwhile, in a large bowl, combine the dry ingredients – cornmeal, all-purpose flour, sugar, baking powder, baking soda, salt, and cinnamon. Mix well and then add the wet ingredients – eggs, milk, and melted butter. Stir until just combined, and then gently fold in the chopped bacon.
  • Carefully remove the muffin tin from the oven after the initial 10 minutes of baking. Quickly spoon 2 tablespoons of the muffin batter on top of the peaches in each cup. Spread the batter evenly and use up any excess. Return the muffin tin to the oven and bake for an additional 14-15 minutes, or until the tops turn golden brown.
  • Allow the muffins to rest for 10 minutes in the tin, then carefully turn them over to release them. Enjoy the wonderful blend of flavors in these Peach & Bacon Cornbread Muffins! Serve them with butter for a savory twist or drizzle with caramel sauce for a sweeter treat.
