Grease a 9 x 13-inch baking dish with non-stick cooking spray.
Place the Golden Grahams cereal in a large mixing bowl.
In a large saucepan over medium-low heat, melt the unsalted butter. Add 5 cups of marshmallows, salt, and vanilla extract. Stir with a rubber spatula until the mixture becomes a creamy marshmallow sauce.
Quickly pour the marshmallow sauce over the Golden Grahams cereal. Mix the ingredients together until well combined, and then gently fold in the milk chocolate chips. Spread this mixture evenly into the prepared 9 x 13-inch baking dish.
Place the baking dish in the refrigerator for just 30 minutes to allow the mixture to firm up.
Sprinkle the remaining 2 cups of marshmallows evenly over the top of the treats. Place the baking dish under the broiler for 30 seconds to 1 minute. Be vigilant and watch carefully to prevent the marshmallows from burning; they can toast quickly!
