Ingredients
  

Cake:

  • 1 Box Strawberry Cake Mix
  • 1 package 3.4 oz Vanilla or Cheesecake Instant Pudding
  • 1 Cup Vegetable Oil or Canola Oil
  • 1 Cup Full Fat Sour Cream
  • 4 Eggs
  • ½ Cup Milk
  • 1 Tbsp Vanilla Extract

Poke Filling:

  • 1 package 3.4 oz Vanilla or Cheesecake Instant Pudding
  • 2 Cups Milk

Topping:

  • 8 oz of Tubbed Whipped Cream
  • 1.5 Cups Fresh or Frozen Strawberries
  • 1 Tbsp Sugar
  • 1 tsp Vanilla Extract

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • In the bowl of a mixer, combine all the wet ingredients for the cake mix and mix for 1 minute.
  • With the mixer on low, add in the pudding mix and cake mix. Beat on medium speed for 2 minutes.
  • Pour the cake batter into a deep dish 9×13 pan that has been sprayed with non-stick cooking spray.
  • Bake for 35-40 minutes or until a toothpick inserted into the middle comes out clean.
  • Once the cake is done, let it cool on the counter for 20-30 minutes.
  • Once the cake has lightly cooled, poke holes all over it using the back of a spatula or a fork.
  • In a bowl, mix together the pudding mix and milk. Immediately pour the mixture over the cake, ensuring it fills the holes.
  • Cover the cake and place it in the refrigerator for at least 2 hours to set.
  • In another bowl, combine the strawberries, sugar, and vanilla extract. Gently mash the strawberries to create a chunky puree.
  • Top the chilled cake with whipped cream, followed by the strawberry puree.
