Tater Tot Breakfast Casserole with Breakfast Gravy

Easy breakfast casserole that the whole family will love. We make this the day before big holidays like Thanksgiving and Christmas to pop in the oven and eat early in the morning while we finish cooking. This is also a great and easy brunch or potluck dish!

Ingredients

  • 1 lb Breakfast Sausage
  • 1/2 Onion Diced
  • 1/2 Green Bell Pepper Diced
  • 1/2 Red Bell Pepper Diced
  • 1 tsp Salt, Pepper, and Garlic Powder Each
  • 32 Oz Frozen Tater Tots
  • 8 Eggs Whisked
  • 3 1/2 Cups Whole Milk Divided
  • 2 Cups Sharp Cheddar Cheese Shredded
  • 1 tsp Salt, Pepper, and Garlic Powder
  • 2 Tbsp Butter or Bacon Grease
  • 2 Tbsp Flour
  • Salt & Pepper To Taste

Instructions

  • Pre-heat your oven to 350 degrees.
  • In a large pan over medium heat, brown the sausage and cook the vegetables. Add salt, pepper, and garlic powder. Remove from heat once browned and your vegetables are cooked. Do not drain your fat!
  • Spay a 9×13 with non-stick cooking spray. In a large bowl. whisk together your eggs, 2 cups of milk, salt, pepper, and garlic powder.
  • Add all of the frozen Tater tots to the 9×13. Using a slotted spoon, add cooked sausage and vegetables. Top with the egg/milk mixture and sharp cheddar cheese. Bake in the oven for 60-70 minutes, uncovered.
  • Once the casserole has 15 minutes left baking, start on your breakfast gravy.
  • In the same pan that you browned the sausage, melt 2 Tbsp of butter. Once the butter has melted and stir in 2 Tbsp of flour. Whisk around until the mixture is smooth. Cook for 2 minutes. Slowly pour in the rest of the milk. It is best to add it in thirds, stirring each time till it becomes a paste, then add in the next 1/3 till you have gravy.
  • Let the casserole rest for 10 minutes before digging in! Top the casserole with the gravy or serve this on the side!
  • Enjoy!

Notes

This casserole can be made ahead of time and then warmed up the day of. Completely make the casserole, top it with gravy, cover with foil, and place it in the fridge. On the day of eating, bake in a 350-degree oven covered for 20-30 minutes. You just want the casserole to warm up and enjoy!
