- 2 Jalapenos stems removed (remove seeds for milder taste)
- 1 Poblano pepper stem, core, and seeds removed
- 7-8 Tomatillos halved (about 16 oz)
- 5-6 Roma tomatoes halved
- 6 whole garlic cloves
- 1 Lime halved
- 1-2 tbsp Vegetable oil
- 1 tsp Garlic powder
- 1 tsp Salt
- 1 tsp Black pepper
- 1 tsp Dried oregano
- ¼ cup Fresh cilantro
- Salt and pepper to taste
Preheat your oven to broil at 500°F and position the oven rack on the top setting.
Place prepared jalapenos, poblano, tomatillos, tomatoes, garlic, and lime on a baking sheet. Drizzle with vegetable oil and sprinkle with garlic powder, salt, black pepper, and dried oregano.
Roast in the preheated oven for 10-12 minutes or until the vegetables begin to char.
Remove from the oven and transfer all ingredients, including the squeezed lime juice, to a blender or food processor. Add cilantro.
Blend until smooth, approximately 20 seconds.
Taste and adjust seasoning with salt and pepper as needed.
