Blackened Shrimp Alfredo Pasta

- 16 oz of Shrimp peeled and deveined
- 12 oz of bow tie pasta cooked till al dente
- 1 tablespoon of Avocado Oil
- 1 teaspoon of lemon pepper seasoning
- 3 tablespoon of Blackened Seasoning
- 1 Green Bell Pepper Diced
- 1 Red Bell Pepper Died
- 1 Onion Diced
- 8 oz of Mushrooms Diced
- 4-5 Garlic Cloves
- ½ Cup of Butter
- 4 Cups of Heavy Cream
- 1 Cup of Freshly Grated Parmesan
- 8 oz of Mozzarella Cheese
- Salt, Pepper, and Garlic Powder to taste
Boil the pasta in salted water according to package directions. Reserve 1 cup of pasta water before draining.
Toss shrimp with avocado oil, lemon pepper seasoning, and blackened seasoning.
Heat avocado oil in a large pan and cook shrimp for 5-10 minutes until done. Remove shrimp and juices from the pan, set aside.
Add more avocado oil to the pan and sauté bell peppers, onions, and mushrooms for about 5 minutes. Season with salt, pepper, and garlic powder. Add minced garlic during the last minute.
Remove vegetables from the pan and set aside.
Melt butter in the same pan. Add heavy cream and simmer for 3-4 minutes, stirring constantly to avoid burning.
Stir in grated Parmesan cheese on low heat until melted.
Add cooked pasta, shrimp (with juices), and sautéed vegetables to the pan. Toss to combine.
Add mozzarella cheese and toss until melted and well-combined.
If the sauce is too thin, gradually add reserved pasta water to thicken.
Serve with garlic bread and enjoy.
