Roasted Jalapeno and Cheddar Cheese Sourdough Bun

Soft Cheesy and Smoky Sourdough Buns. These are great buns for hamburgers, sandwiches, or just with some butter. Check out how I use them in my Chipotle Chicken Sandwich recipe!

Ingredients
  

  • 3 Roasted Jalapenos Skinned De-Seeded, and Roughly Chopped
  • 1 Cup Shredded Sharp Cheddar Cheese
  • 1/2 Cups Warm Water
  • 2 1/2 tsp Active Yeast
  • 1 Tbsp Honey
  • 3/4 Cups Warm Whole Milk
  • 1/2 tsp Table Salt
  • 1/4 tsp Baking Soda
  • 2 1/2 Cups All Purpose Flour
  • 1 Tbsp Cornmeal
  • 1 Tbsp Melted butter

Instructions
 

  • Mix your warm water, yeast, and honey together. Set aside for 5 minutes or until it is foamy.
  • In a large bowl mix together salt, baking soda, and all-purpose flour.
  • Once the yeast is foamy add to the dry ingredients along with the milk. Mix.
  • Add in your roasted jalapenos and cheddar cheese.
  • Turn dough out onto a flour surface. Knead the dough for 5 minutes. Divided the dough into 6 even balls. Cuff your hand and circle the dough to create a bun shape. You will have to flatten them lightly.
  • On a baking sheet with parchment paper, sprinkle cornmeal over the parchment paper. Place the buns onto the baking sheet and cover with a towel or plastic wrap for at least 1 hour or until the buns have doubled in size. You want the buns to proof in a warm place. You can turn your oven on to 150 degrees let it come to temperature, turn off, and place the buns inside the oven.
  • After the buns have completed proofing (remove from the oven) pre-heat your oven to375 degrees. Bake buns for 20 minutes or until they are nice and golden brown.
  • Lightly brush the tops with melted butter. Move to a wire rack to finish cooling after 5 minutes.
