Ingredients
  

Blueberry Sauce:

  • 1 cup frozen blueberries
  • ¼ cup fresh orange juice about 1 large orange, reserve 2 tbsp
  • 1 tbsp orange zest
  • 2 tbsp honey
  • 2 tsp cornstarch

Blueberry Waffles:

  • 1 and ¼ cups whole milk
  • ¾ cup full-fat Greek yogurt or sour cream
  • 3 large eggs
  • ¼ cup melted butter
  • 2 cups flour
  • 3 tsp baking powder
  • ½ tsp salt
  • 4 tbsp sugar
  • 1 cup frozen blueberries

Instructions
 

Blueberry Sauce:

  • In a small saucepan, combine frozen blueberries, fresh orange juice (excluding the reserved 2 tbsp), orange zest, honey, and cornstarch.
  • Place the saucepan over low heat and simmer gently.

Blueberry Waffles:

  • In a large bowl, whisk together milk, Greek yogurt/sour cream, eggs, and melted butter.
  • Add flour, baking powder, salt, and sugar to the wet ingredients. Mix until just combined; do not overmix. Fold in frozen blueberries.

Cooking Waffles:

  • Preheat your waffle maker and lightly spray with non-stick cooking spray.
  • Pour ¼ cup of batter onto the waffle maker and cook until done or until desired doneness is achieved.
  • Finishing the Blueberry Sauce:
  • Lightly mash the blueberries in the sauce with a fork.
  • Mix the reserved 2 tbsp of orange juice with 2 tsp of cornstarch, then whisk into the sauce.
  • Remove the sauce from the heat.
