Santa’s Cookies
Cookies for all!
Ingredients
- 1 cup unsalted butter at room temperature
- 1 cup brown sugar
- 1 cup granulated sugar
- 3 eggs
- 1 cup creamy peanut butter
- 1 tbsp vanilla extract
- 4 cups quick oats
- ½ tsp salt
- 2 tsp baking soda
- ½ cup semi-sweet chocolate chips
- ½ cup peanut butter chips
- 1 cup M&Ms holiday colors
- ½ cup holiday sprinkles not the small sugar/crystal sprinkle kind
Instructions
- Preheat the oven to 350 degrees.
- In the mixing bowl, cream together butter and sugars for 3 minutes. Add eggs one at a time, followed by peanut butter and vanilla extract.
- Scrape down the sides of the bowl with a spatula.
- Add oats, salt, and baking soda. Mix until well combined.
- Using a spatula, fold in chocolate chips, peanut butter chips, M&Ms, and sprinkles.
- Scoop out 2 tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake on the center rack for 17-18 minutes. Allow the cookies to rest on the baking sheet for 5 minutes before transferring them to a cooling rack or plate.
- This recipe yields 3 dozen cookies. Bake 12 at a time, one tray at a time.
