Why We Love This Recipe
If you’ve got dove breasts in the freezer from a good hunt, this is the recipe that turns them into something everyone fights over at the table. At Bailee’s Kitchen, we believe wild game deserves seasoning that actually lets the meat shine instead of covering it up, and that’s exactly what our Well Rounded All Purpose Seasoning and Bucking Beef blend do here. A quick milk soak tames the gamey edge, cream cheese and jalapeño bring the classic popper flavor, and a wrap of bacon holds it all together while it bakes and crisps under the broiler. These are the kind of poppers that disappear off the platter before you’ve even set out the sauce. Whether you’re feeding a hunting camp or hosting friends for game day, this one earns its spot on repeat.
Why You’ll Love This Recipe
- Turns dove breast into a crowd-pleasing appetizer instead of just a side note on the plate
- The milk soak cuts the gamey flavor so even picky eaters come back for seconds
- Bacon and cream cheese make it feel indulgent while the seasoning keeps the flavor balanced
- Easy to customize with your favorite finishing sauce, from smoky BBQ to sweet raspberry jam
Ingredients
- 7 dove breasts, deboned and halved (14 pieces total)
- 1 cup milk
- 2 tbsp avocado oil
- 3 tbsp Bailee’s Kitchen Well Rounded All Purpose Seasoning
- 1 block cream cheese, softened
- 7 jalapeños, halved and deseeded (14 pieces)
- 14 slices thin-cut bacon
- 3–4 tbsp Bailee’s Kitchen Bucking Beef
- Favorite BBQ sauce, hatch jalapeño jam, or raspberry jam, for serving
Instructions
- Add the cleaned dove breasts to a bowl with 1 cup of milk. Let marinate for about 30 minutes to help pull the gamey flavor out of the breast.
- Drain and lightly rinse the breasts, then return them to the bowl with the avocado oil and Well Rounded All-Purpose seasoning. Mix until all breasts are evenly coated.
- Preheat the oven to 350°F.
- Spoon about 1 tablespoon of cream cheese into the center of each deseeded, halved jalapeño. Top with one seasoned dove breast piece.
- Wrap each jalapeño in a slice of bacon, then season all sides of the bacon with Bailee’s Kitchen Bucking Beef. Place onto a baking rack.
- Repeat until all jalapeños and dove breast pieces are used.
- Bake for 25–30 minutes, until the dove breast reaches an internal temperature of 165°F.
- Switch the oven to broil and crisp the tops of the bacon for 1–2 minutes, watching closely so it doesn’t burn.
- Brush with your favorite BBQ sauce, jalapeño jam, or raspberry jam, if desired, and serve warm.
Tips and Variations
- No dove on hand? This recipe works just as well with quail or diced chicken breast.
- For extra crunch, finish the poppers on the grill over indirect heat instead of the broiler.
- Toothpicks help keep the bacon secured while baking, especially if the bacon slices are on the shorter side.
- Leftover poppers reheat well in the oven at 350°F for about 10 minutes; the microwave will make the bacon chewy.
FAQ
Can I make these ahead of time? Yes. Assemble the poppers up to a day ahead and store them covered in the refrigerator, then bake them fresh when you’re ready to serve.
Do I have to marinate the dove breast in milk? The milk soak isn’t strictly required, but it makes a noticeable difference in mellowing the gamey flavor, especially if you’re serving guests who are new to wild game.
What’s the best sauce to serve with these? It comes down to preference. BBQ sauce keeps things smoky and familiar, hatch jalapeño jam adds another layer of heat, and raspberry jam gives a sweet contrast to the salty bacon and spicy pepper.
