Pecan Streusel Coffee Bundt Cake

Ingredients
  

Streusel

  • 1 3/4 Cup All Purpose Flour
  • 1 Cup Light Brown Sugar
  • 1/2 Tbsp Cinnamon
  • 1/4 tsp Salt
  • 1 Cup Unsalted Butter, Melted
  • 1 Cup Chopped Pecans

Cake Mix

  • 1/2 Cup Unsalted Butter Room Tempature
  • 1 Cup White Sugar
  • 1 Egg Room Temperature
  • 1 tsp Vanilla Extract
  • 2 Cups All-Purpose Flour
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Salt
  • 3/4 Cup Milk
  • 1 Cup Sour Cream

Glaze

  • 1 Cup Powder Sugar
  • 2 Tbsp Milk
  • 1 Tbsp Vanilla Extract

Instructions
 

  • Pre heat oven to 350 degrees.
  • Grease and flour your Bundt pan.
  • = In a medium bowl, add all the streusel mixture and mix till combined.
  • In the bowl of a mixer, add soft butter and 1cup of sugar. Mix for 2-3 minutes or until it is pale in color.
  • Add in egg and vanilla extract. Mix till incorporated. Slowly add in your dry ingredients. Mix till incorporated. Add in milk and sour cream and mix till smooth.
  • Add half of the streusel mix to the bottom of your pan, top with half of the cake mix, and repeat.
  • Bake for 55 minutes or until a toothpick pulls clean.
  • Let the cake rest for 10 minutes. Flip cake over and remove from the pan.
  • Let the cake completely cool then top with the glaze and extra pecans.
  • Enjoy!
