Taco Skillet with Salsa Ranch Sour Cream
The Taco Skillet is a delicious one-pan dish featuring ground beef, vegetables, and flavorful seasonings cooked to perfection. Ingredients
- 1 tablespoon of Oil
- 1 pound of Ground Beef
- 1 diced Onion
- 1 Poblano Pepper deseeded and diced
- 4 minced Garlic Cloves
- 1 package of Taco Seasoning
- 15 oz can of Black Beans drained and rinsed
- 10 oz can of Fire Roasted Diced Tomatoes with Green Chilies
- 1 cup of Corn
- 1 cup of Water
- 1 cup of Instant Rice
- 1-2 cups of Shredded Cheddar Cheese
For the Salsa Ranch Sour Cream:
- 1 cup of Sour Cream
- ½ cup of Chunky Salsa
- 1 teaspoon of Ranch Mix
Instructions
- In a pan over medium heat, add oil, ground beef, diced onion, and diced poblano pepper. Cook until the meat is no longer pink. Remove excess grease.
- Stir in minced garlic and taco seasoning. Cook for an additional 2 minutes.
- Add in the black beans, diced tomatoes with green chilies, corn, water, and instant rice. Stir to combine. Bring to a low simmer, cover, and cook for 15 minutes or until the rice is fully cooked.
- Sprinkle shredded cheddar cheese over the top, cover with a lid, and allow the cheese to melt.
