- In a pan over medium heat, add oil, ground beef, diced onion, and diced poblano pepper. Cook until the meat is no longer pink. Remove excess grease.
- Stir in minced garlic and taco seasoning. Cook for an additional 2 minutes.
- Add in the black beans, diced tomatoes with green chilies, corn, water, and instant rice. Stir to combine. Bring to a low simmer, cover, and cook for 15 minutes or until the rice is fully cooked.
- Sprinkle shredded cheddar cheese over the top, cover with a lid, and allow the cheese to melt.
- Serve with chips or use as a burrito filling.
For the Salsa Ranch Sour Cream:
- In a small bowl, combine sour cream, chunky salsa, and ranch mix. Mix well and enjoy as a topping for the dish.
