Trim the fat off of the chicken thigs. Slice into equal strips and place into a large bag or bowl.
Slice your veggies into strips. Try to make them the same size as the sliced chicken thighs. You want everything to cook equally.
Place your veggies in with your thigh meat. Add olive oil and Fajita seasoning. Toss around to ensure everyone gets a good coat. Place in the fridge for at least 1 hour.
Pre-heat your air fryer to 390 degrees. Cook your chicken and veggies in a single layer. I usually have to cook this in two batches. Cook for a total of 15 minutes stirring everything half way.
Your chicken should be at 165 degrees and ready to eat. If not, cook 1-2 minutes longer.
