In a large bowl, combine limeade or pineapple juice, low sodium soy sauce, ketchup, brown sugar, minced garlic, honey, and chili paste to create the marinade. Set aside ½ cup of the marinade for basting later.
Add the chicken to the remaining marinade in the bowl. Refrigerate for at least two hours.
Assemble Skewers:
When ready to cook, thread the marinated chicken, red bell peppers, red onion, and pineapple onto the skewers in equal portions.
Optionally, sprinkle Spiceology’s Maui Wowee Hawaiian Teriyaki Rub over the skewers for added flavor.
Preheat and Air Fry:
Preheat the air fryer to 370 – 375 degrees Fahrenheit (190 – 190°C).
Place the assembled chicken skewers in a single row in the air fryer basket. Depending on the size of your air fryer, you might need to cook in batches.
Cook the skewers for 8 minutes, then carefully flip them over.
Baste and Finish Cooking:
Baste the skewers with the ½ cup of reserved marinade.
Continue to air fry for an additional 8 minutes or until the internal temperature of the chicken reaches 165 degrees Fahrenheit (74°C).
Serve:
Once cooked, remove the skewers from the air fryer.
Serve the Hawaiian chicken skewers alongside rice or your preferred side dishes.
