Method
- Preheat the oven to 375 degrees.
For the apple filling:
- Combine all the apple filling ingredients (except vanilla extract) in a large pot.
- Cook over low heat for 10-15 minutes until apples are tender. Gently toss the apples occasionally to prevent breaking.
- Once apples are soft and sauce is thickened, remove from heat and fold in vanilla extract.
- Transfer the apple mixture to a deep 9x13-inch dish.
For the cobbler topping:
- In a large bowl, mix together all dry ingredients.
- Add buttermilk and egg, mixing until a thick biscuit-like batter forms.
- Spread the cobbler topping evenly over the apples in the dish. You can drop scoops of batter over the apples and spread it out.
- Arrange cold butter slices on top of the batter.
- Place the dish on the middle rack of the preheated oven. Put a large pan on the bottom rack to catch any drips.
- Bake for 45-50 minutes or until the top is golden brown.
- Once done, sprinkle with sugar and let it rest for 20 minutes before serving.
- Serve warm with vanilla ice cream and drizzle with caramel sauce. Enjoy!
