Apple Filling Ingredients:
- 4 pounds of apples peeled, cored, and thinly sliced, approximately 7 apples; variety optional
- Zest from 1 small lemon
- Juice from 1 small lemon
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1/4 cup all-purpose flour
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon kosher salt
- 2 teaspoons vanilla extract
Cobbler Topping Ingredients:
- 2 1/2 cups all-purpose flour spooned and leveled
- 1 1/2 cups granulated sugar
- 1 teaspoon kosher salt
- 2 teaspoons baking powder
- 1/2 cup buttermilk
- 1 egg
- 1/2 cup cold butter sliced into 9 pieces
- 1-2 teaspoons sugar for sprinkling
- Vanilla ice cream for serving
- Caramel sauce for drizzling
For the apple filling:
Combine all the apple filling ingredients (except vanilla extract) in a large pot.
Cook over low heat for 10-15 minutes until apples are tender. Gently toss the apples occasionally to prevent breaking.
Once apples are soft and sauce is thickened, remove from heat and fold in vanilla extract.
Transfer the apple mixture to a deep 9x13-inch dish.
For the cobbler topping:
In a large bowl, mix together all dry ingredients.
Add buttermilk and egg, mixing until a thick biscuit-like batter forms.
Spread the cobbler topping evenly over the apples in the dish. You can drop scoops of batter over the apples and spread it out.
Arrange cold butter slices on top of the batter.
Place the dish on the middle rack of the preheated oven. Put a large pan on the bottom rack to catch any drips.
