Summer time pasta salad

Ingredients
  

  • 12 oz Tri-Color Rotini Pasta
  • 10 Cherry Tomatoes Cut in Half
  • 1/2 English Cucumber Sliced into Half Moons
  • 1/4 Cup Black Olives Sliced in Half
  • 1 Yellow Bell Peppers Sliced Thin
  • 1/2 lb Mozzarella Cheese Cubed
  • 6 Slices Bacon, Cooked Chopped
Dressing
  • 1/2 Cup Olive Oil
  • 3 Tbsp Red Wine Vinegar
  • 3 Tbsp Mayo
  • 2 tsp Sugar
  • 3 Garlic Cloves Minced
  • 1/4 Cup Parmesan Cheese
  • 1 tsp Salt
  • 1 tsp Smoked Paprika
  • 1 tsp Oregano Dried
  • 1 tsp Parsley Dried
  • 1 tsp Basil
  • 1/2 tsp Black Pepper

Method
 

  1. Cook pasta till al dente. Prep all the ingredients including the dressing.
  2. Once the pasta is done, drain, and let it cooldown. Add everything to a big bowl and toss together. Let it rest in the refrigerator for 1 hour or overnight.
