Cake:
- 1 Yellow Box Cake Mix
- 3.4 oz box Instant Vanilla Pudding Mix
- 4 Large Eggs
- ¾ cup Vegetable Oil
- 1 tsp Vanilla Extract
- 8 oz Lemon Lime Soda
Icing:
- Zest of One Lime
- Zest of One Lemon
- 2 cups Powdered Sugar
- ½ cup Lemon Lime Soda
Cake:
Preheat the oven to 325°F (165°C). Heavily coat a large bundt pan with non-stick cooking spray.
In a large bowl, combine all the cake ingredients except the lemon lime soda. Mix on medium speed for 2 minutes using an electric mixer or mix by hand.
Slowly add in the lemon lime soda, mixing for 1 minute until incorporated. The soda may fizz a little, so add it gradually.
Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and allow it to cool in the pan for 10 minutes before removing it from the pan.
Icing:
In a bowl, whisk together powdered sugar and lemon lime soda until it forms a smooth icing.
Drizzle the icing over the cooled cake.
Garnish with lemon and lime zest.
